Banana Bread is not originally a Jamaican recipe, however it is very popular and made by many Jamaicans across our island especially since bananas are one of our popular tropical fruits. Many Jamaicans have developed a love for good banana bread, while I like banana bread, I sometimes prefer to make them into muffins which is quicker and easier to bake and gives you individual portions.

 

 

 

 

In my search and experimenting ( as a baker myself ) for the perfect recipe which would consist of a banana bread that was moist, yet fluffy similar to a cake, with the right amount of banana flavor and sweetness…

 

After many different recipes, this is the recipe I came up with which I think is perfection in my books. This can be made as a banana bread, but i usually make it as muffins by combining my precisely measured ingredients together in a mixing bowl.

 

 

Ingredients for Moist & Fluffy Banana Muffins

 

 

 

  • Ripe Bananas – The riper the better
  • All Purpose Flour
  • Salt
  • Baking Powder
  • Baking Soda
  • White Sugar
  • Brown Sugar
  • Eggs
  • Butter – melted. (To make a lower fat version, substitute ham of the butter with apple sauce.) Same great taste.

 

 

Steps to making Moist & Fluffy Banana Muffins

  1. Pre-heat oven & line 12 regular sized muffin pan with muffin papers or grease and flour pan. If using a loaf tin, grease and flour pan.
  2. Measure out and set up all ingredients in ramekins or small bowls.
  3. Mash your bananas using a fork or masher.
  4. In a large mixing bowl, sift together your flour, salt, baking powder and baking soda. Use a whisk to mix well.
  5. Add melted butter, eggs and sugars to the mashed bananas and stir until combined.
  6. Add banana mixture to the flour mixture and stir just until moistened.
  7. Use a scoop or spoon and fill each cup about 2/3 full. If using a loaf pan, pour all mixture in there.
  8. Bake muffins 18-20 minutes or golden brown on top. Banana bread will bake 1 hour, insert a knife in the middle to check if ready, add minutes as needed until knife inserted is clean.
  9. Cool about half an hour and serve.

Ingredients

  • 1 1/2 Cups All Purpose Flour * may substitute half the flour with whole wheat for healthier version
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 3 Medium Bananas Mashed
  • 1/2 Cup White Sugar
  • 2 Tbsp. Brown Sugar
  • 1 Egg Lightly beaten
  • 1/3 Cup Butter Melted ** For lower fat version, use 3 Tbsp. Butter and 3 Tbsp. Apple Sauce

Instructions

  1. Pre-heat oven to 350 degrees. Line 12 muffin cups with muffin papers or grease
  2. In a large bowl, sift together the dry ingredients and whisk to mix.
  3. In another bowl, mash bananas well and add melted butter, eggs and sugars
  4. Stir banana mixture into flour mixture just until moistened
  5. Spoon batter into prepared muffin cups.
  6. Bake in pre-heated oven 18-20 minutes.

Recipe Notes

If making a banana bread, grease and flour a loaf pan and bake for about 1 hour. Insert a knife in the middle to check when done.
