What Is Jamaican Fricassee Chicken?
Jamaican fricassee chicken is a popular way of making chicken in our country. This is a simply seasoned but flavourful dish where the chicken is browned before stewed down. Although it is similar to Jamaican Brown Stew Chicken, it is still somewhat different and has a different flavor.
Growing up as a child, Fricassee Chicken was another frequently cooked and favorite in our home. This is adapted from my Mom’s recipe which was always the best. This is still in regular rotation in my home.
Ingredients
- Chicken – cut in pieces for stew.
- Onions
- Green Bell Pepper
- Tomatoes – Preferably plummy or bright red ones.
- Garlic – minced
- Fresh Thyme Leaves
- Seasoned Salt
- Garlic Salt
- Black Pepper
- Soy Sauce – Dark or Mushroom.
Preparation
- This is made simply by using cut up or chicken for stew.
- It is generously seasoned with seasoning salts, black pepper, fresh minced garlic, thyme leaves, onions, tomatoes and green peppers and of course scotch bonnet if you love spice.
- After marinating in a sealed seasoning bowl, chicken pieces are fried on each side until brown and then stewed back down in a deep non-stick pot with seasonings and a small amount of soy sauce and water.
- Adding pineapples is optional and gives it a nice little twist as well. Either way, this is a very flavorful Jamaican dish.

Ingredients
- 8 Pieces Chicken Cut in 2
- 4 Cloves garlic Minced
- 3 Sprigs Fresh Thyme leaves
- 1 Cup Tomatoes diced
- 1 Cup Onions Chunks
- 3/4 Cup Green Pepper Chunks
- 1 tsp. Salt
- 1 tsp. Season Salt
- 1 tsp. Garlic Salt
- 1 tsp. Black Pepper
- 2 Tbsp. Oil
- 1 Tbsp. Dark or Mushroom Soy Sauce
- 2 Tbsp. Water
- *1/2 Cup Pineapple Tidbits *optional
Instructions

Cut up chicken, wash, and season with everything except oil, soy sauce, water and pineapple. Marinade 1-2 hours.

Heat a deep pot on medium-high heat, add oil, when hot, add chicken pieces one at a time in a single layer cooking only a few pieces at a time. Brown on each side.

Remove pieces from the pot as they get brown. When all pieces are brown, place all chicken back in pot with seasonings from bowl, soy sauce, and water.

Cover and cook down on medium heat for about half an hour, checking and stirring every couple minutes in between. Add a small amount of water if needed.

If adding pineapples, add in last 5 minutes.
