Awesome Teriyaki Chicken

 

Teriyaki is a cooking technique used in Japanese cuisine. It is usually used with broiled or grilled foods but can also be used with baked. Teriyaki has now become a popular sauce used in cooking in many other countries. It can be made with just about any meat you choose such as chicken, beef, salmon, fish, pork or even tofu. Usually the sauce is made and thickened then used as a glaze as you cook your meat. It is a sweet, citrusy and tangy sauce. My teriyaki sauce is made from scratch, which is what makes it awesome and better than the bottled versions.

 

 

So, in this post, I am featuring my Teriyaki Chicken. However, I also have a Teriyaki Roast Pork on my blog and will also be posting other teriyaki combinations such as my Teriyaki Tofu. I think my Teriyaki Chicken is amazing mainly due to the sauce that compliments it. This is a dish frequently made in my home especially on Sundays. It is loved by the kids as much as by the adults.

 

Ingredients for Making Teriyaki Chicken

 

 

  • Chicken – Whole or parts
  • Garlic – minced
  • Ginger – grated
  • Season Salt
  • Garlic Salt
  • Black Pepper – *Optional
  • Apple Cider Vinegar
  • Dark or Mushroom Soy Sauce
  • Oyster Sauce – (not pictured)
  • Brown Sugar
  • White Sugar
  • Honey
  • Pineapples
  • Pineapple Juice
  • Corn Starch
  • Water

 

How to Prepare Amazing Teriyaki Chicken

  1. Wash chicken and cut off any fatty pieces on the inside.
  2. In a large seasoning bowl, rub salts and black pepper on the chicken and cover for at least 1 hour.
  3. In the mean time, in a small pot, combine the garlic, ginger, apple cider vinegar, sugars, honey, oyster sauce, mushroom or dark soy sauce and pineapple juice. Place on medium heat.
  4. Dilute the corn starch and water, when sauce start to boil, add it to the sauce while stirring and it starts to slightly thicken. Remove from heat.
  5. Pre-heat oven to 350 degrees. Place chicken in a baking pan and cover with foil. Bake for 40 minutes.
  6. Remove foil and drain drippings into a small pot. Baste chicken with sauce and bake uncovered for 20 minutes. Turn pieces and baste the other side and bake another 20 minutes.
  7. Turn chicken again, add cut up pineapple with any remaining sauce  and bake another 8-10 minutes or brown enough. If needed, the heat may be turned up to 375 or 400 in this last 10 minutes.
  8. During basting period, add back small amounts at a time of drippings so the chicken doesn’t dry out or it can be added at the end to give you more sauce or gravy.

Ingredients

Chicken

  • 1 whole Chicken or 8-12 pieces (can be in parts)
  • 1 tsp. Seasoned Salt
  • 1 tsp. Garlic Salt
  • 1/4 tsp. Black Pepper *(optional)

Teriyaki Sauce

  • 2 tsp. Ginger grated
  • 3-4 cloves Garlic minced
  • 1 Tbsp. Apple Cider Vinegar
  • 2 Tbsp. Dark or Mushroom Soy Sauce
  • 1 Tbsp. Oyster Sauce
  • 1/4 cup +2 Tbsp. Brown Sugar
  • 1/4 cup White Sugar
  • 2 Tbsp. Honey
  • 1/4 cup Pineapple Juice
  • 2 slices Pineapple cut in small pieces or medium
  • 2 Tbsp. Corn Starch
  • 3 Tbsp. Water

Instructions

Chicken

  1. Wash, clean and season chicken with black pepper and salts in a mixing bowl. Cover for at least 1 hour.

  2. When ready to bake, pre-heat oven to 350 degrees and place chicken in a baking pan, cover with foil.

  3. Bake for 40 minutes. Make your teriyaki sauce in the meantime.

  4. After 40 minutes, remove foil and drain drippings into a small pot. Baste with some teriyaki sauce and bake another 20 minutes.

  5. Remove once again, turn chicken, baste other side and bake another 20 minutes.

  6. Turn once more and pour remains sauce on top and pineapple pieces and bake another 10 minutes or desired color. You may turn up the heat if desired to 375 or 400 degrees.

  7. You may add drippings through baking a small amount at a time as needed to prevent from drying out or at the end to bring up the sauce or gravy.

Teriyaki Sauce

  1. Combine all sauce ingredients in a small pot except pineapples, cornstarch and water. Place on medium heat. Bring to a gentle boil.

  2. Dilute cornstarch and water and add to sauce when it starts to boil. Stir until slightly thickens about 1-2 minutes and remove from heat.

Recipe Notes

**This can be served with sides of choice such as white rice, baked macaroni and cheese or vegetables or Lo-Mein.
