Jamaican Corned Pork in Coconut Milk

Corned pork is a salted or pickled pork that is a popular traditional dish prepared in Jamaica. You can purchase the corned pork in most Jamaican groceries if living abroad. Corned pork is usually prepared by boiling for 1-1/2 – 2 hours or until soft or pressure cooked for less time until soft. Then it is fried to brown and cooked down with natural seasonings such as onions, tomatoes, garlic, green pepper, thyme and scotch bonnet pepper. Corned pork can be cooked and served by itself , but another popular dish is ackee & corn pork. My recipe which may not be as popular but I discovered is very delicious is corned pork in coconut milk. Luckily, here in Jamaica, we have a company that sells already cooked corned pork called Caribbean Passions which is what I use for quicker preparation.

In Jamaica, corned pork is usually served for any meal of the day and usually with ground provisions such as boiled yellow or any yam, green bananas, roast breadfruit or boiled or fried dumplings. Although this recipe is featured with coconut milk, you can omit the coconut milk if preferred and you can also adjust it to be cooked with ackee alone or ackee & saltfish. Whichever way you cook it I’m sure this will be an enjoyable dish.

  1. If using fresh corned pork that is uncooked, cut in 2″ pieces and place in enough water to cover the pork in a deep pot and boil on high heat for 1-1/2 – 2 hours or until soft adding water as needed. Please note that pickled uncooked corn pork is usually very salty, so to boil off most of the salt, you would have to change the water after the first 30-40 minutes of cooking and continue the second boil. If using a pressure cooker, pressure in 20 minute intervals until soft.
  2. Cut up all vegetables and set aside.
  3. Fry pork pieces in a little oil in a non-stick skillet until brown on both sides.
  4. Add vegetables and sauté about 1-2 minutes.
  5. Add coconut milk and black pepper, simmer for about 5 minutes and serve.
