Jamaican Corned Pork in Coconut Milk

Ingredients
  • 1 2 lb. Caribbean Passion Corned Pork or pickled uncooked corn pork
  • 1 cup Plummy Tomatoes diced or regular tomatoes
  • 1 medium Onion sliced
  • 1/2 cup Green Pepper diced
  • 1/2-1 Scotch Bonet Pepper adjust to taste of spiciness
  • 2 sprigs Fresh Thyme Leaves or dried
  • 1/2 tsp. Black Pepper
  • 1-1/2 cups Coconut Milk
  • 2 Tbsp. Oil
Instructions
  1. If using fresh uncooked corn pork, cut in 2" pieces and place in a deep pot covered in enough water to cover pork and boil on high heat with cover for 1-1/2 - 2 hours or until soft. Add water as needed.

    Please note that pickled uncooked corn pork is usually very salty, so to boil off most of the salt, you would have to change the water after the first 30-40 minutes of cooking and continue the second boil.

  2. If using a pressure cooker, pressure in 20 minute intervals until soft. Follow the above advice to change the water in between pressuring.

  3. When cooked, or if using Caribbean Passion Corned pork, cut up and fry in a non-stick skillet on medium-high heat in a little oil until brown on both sides.

  4. Add vegetables and sauté for 1-2 minutes.

  5. Add black pepper and coconut milk and simmer for about 5 minutes and serve.

Recipe Notes

Serves well with any boiled yam, green bananas, boiled or fried dumplings, roast or fried breadfruit.
