Easy Homemade Beefaroni

Beefaroni is a dish that has been around for years according to research. However, I set out and practically came up with my own easy homemade version years ago from my sons were little. It is a quick & easy and kid friendly meal to start. Your kids will love this dish.

It is a combination of pasta, pasta sauce with beef mince, spices and finally topped with cheese and baked.

To make it even simpler, I used to just cover the skillet after sprinkling the cheese until it was melted and then served. But after trying the baked version I think the flavors combine better and I like the outside golden brown & crispiness of the top and decided to stay with this version. However, any way is fine as the beauty of this dish is that it is a “quick & easy” meal.

You can use elbow macaroni, rotini, penne or any other pasta as desired. I usually boil it a few minutes less than recommended if I am baking it.

  1. Measure out your ingredients and cut up vegetables.
  2. Crumble minced beef into a medium seasoning bowl.
  3. Add vegetables and salts to season beef. May marinade about an hour, but not necessary.
  4. Using a large non-stick skillet on high heat, place the mince mixture in and continue stirring and crushing with a fork as you work so it stays crumbled. When no longer pink, drain off the liquid.
  5. Pre-heat oven to 350 degrees F.
  6. Cook pasta according to package directions in a large pot (less 2 minutes if planning to bake). Drain and set aside.
  7. Add pasta sauce, sugar and oregano to the mince and stir on medium-low heat for about 5 minutes.
  8. Add pasta to the meat mixture and stir well to combine.
  9. If baking, pour into a 9 x 13″ baking pan. Sprinkle with mozzarella to cover completely and bake uncovered for 30 minutes or brown as desired.
  10. If not baking, sprinkle mozzarella while in the skillet and cover for 10-15 minutes until cheese melts.
  11. Cool for at least 30 minutes and serve.
