Jamaican Banana Fritters
There are many kinds of fritters made different ways and using varieties of ingredients in many countries. In Jamaica, I have heard about just every fritter made you can think of from sailfish, corned beef, sardine, plain fritters and one of my favorite which is a sweet fritter made with mashed ripe bananas.

I remember my Dad making this often when we were young using ripe or over ripe bananas, combining a few other ingredients in a mixing bowl then frying them in a non-stick skillet and placing them on a nice serving plate then sprinkling with a little sugar as the finishing touch.
These were so delicious, crispy on the outside, moist on the inside with just the right amount of sweetness. It was always a treat and a useful way to use up the bananas. Sometimes these were also made to serve as breakfast. It is a quick and easy recipe and I hope you enjoy.
Ingredients
- Ripe or over ripe bananas
- Flour
- Sugar
- Salt
- Egg
- Milk
- Vanilla
- Nutmeg
- Oil
Preparation Steps
- Set up all your ingredients measured out.
- Mash bananas in a medium bowl until all mashed out.
- Add your egg, vanilla, sugar, salt, nutmeg and milk. Stir together.
- Add flour and combine well to form a soft dough.
- Place a large skillet on medium heat, after 1 minute add oil for another minute until hot.
- Using a tablespoon, add batter in circles, a few at a time in your pan.
- Turn after a few minutes when golden brown and cook on the other side.
- Remove as cooked to a paper towel lined plate. Then place on a regular plate and sprinkle with a little sugar and serve.
Banana Fritters
Ingredients
- 3 medium Ripe Bananas mashed
- 1 Egg beaten
- 2 1/2 Tbsp. Sugar + more for sprinkling
- 1 tsp. Vanilla
- 1 tsp. Nutmeg
- 1/4 tsp. Salt
- 2 Tbsp. Milk
- 1/2 cup + 3 Tbsp. Flour
- 3 Tbsp. Oil
Instructions

Mash Bananas in a medium bowl until all mashed out.

Place large skillet on medium heat. Add oil, heat 1-2 minutes. When hot, using a tablespoon, add batter in small 2 1/2" circles, a couple at a time. Turn after a few minutes when golden brown and cook on the other side.

Remove to papertowel lined plate, sprinkle each with a little sugar. And enjoy
