Chinese Lo Mein Noodles

 

Lo Mein is a Chinese dish made with egg noodles. It usually contains a mixture of vegetables such as cabbage, broccoli, carrots, snow peas, green or red peppers & onions or other vegetables of choice. You can also include a meat of choice to make this a one pot meal such as chicken, beef, pork or shrimp. It also includes a mixture of Chinese sauces cooked and tossed together to make this family favorite that goes over well with everyone. This is also a very kid friendly meal and a versatile dish. 

 

You can also leave it as a vegetable lo Mein and make a separate meat dish on the side. I sometimes make a vegetable lo mein and do a sweet and sour chicken seperately.

 

 

 

 

Ingredients for Chinese Lo Mein Noodles

 

 

 

  • Chinese Egg Noodles
  • Cabbage – cut into chunks
  • Carrots – cut into sticks
  • Broccoli – cut into small florets
  • Snow Peas – vegetables can be substituted to your choice
  • Red Bell Pepper – optional
  • Green Bell Pepper – either red or green is fine
  • Onions – cut horizontally
  • Garlic – Grated or minced
  • Ginger – grated
  • Teriyaki Sauce
  • Oyster Sauce
  • Hoisin Sauce
  • Sesame Oil – (not pictured)
  • Vegetable Oil (not pictured)

 

 

Preparation of Chinese Lo Mein Noodles

  1. For a basic vegetable Lo Mein, you would pre-cut your vegetables and set aside. Also prepare and measure other ingredients and set aside.
  2. Boil your egg noodles according to package directions in a large pot. Drain and set aside.
  3. The Lo Mein is best stir fried together in a wok or non- stick skillet. Heat your pan on medium-high heat. Add oils, wait a minute or 2 until hot and start adding your vegetables in the order noted in the recipe.
  4. Add sauces and mix. Then add noodles and toss together.
  5. If making with a meat, you would season and pre-cook your meat separately before adding. I have included chicken in my recipe (if you choose to add a meat, this would be an example of the preparation).

Ingredients

  • 1 Lb. Boneless Chicken or other meat
  • 1/2 tsp Seasoned Salt
  • 1/2 tsp. Garlic Salt
  • 1 tsp. Mushroom or dark Soy sauce
  • 1/2 tsp Sugar
  • 2 medium Carrots cut in sticks
  • 2 Cups Broccoli cut in medium pieces
  • 1 Cup Snow Peas
  • 1/2 medium Red Peppers cut in strips
  • 1/2 medium Onion cut in horizontal strips
  • 3 Cups Cabbage cut in chunks
  • 3 Cloves garlic minced
  • 1/2 Tbsp Ginger minced
  • 1 454gm pack Chinese Eggnoodles
  • 2 Tbsp Vegetable Oil
  • 1 Tbsp Sesame Oil

Sauce

  • 3 Tbsp Teriyaki Sauce
  • 3 Tbsp Oyster Sauce
  • 2 Tbsp Hoisin Sauce

Instructions

  1. Cut chicken in small pieces and season with salts, soy sauce, and sugar and set aside.
  2. Cut up all other vegetables and keep separate.
  3. Combine sauces in a bowl.
  4. Boil noodles according to package directions (4-5 minutes), strain off water.
  5. Heat a large skillet or wok on high heat. Add oils, when hot, stir fry chicken or meat of choice 2-3 minutes or no longer pink.
  6. Add carrots, garlic, and ginger and stir fry about 1 minute. Add cabbage, broccoli, and snow peas and stir fry another minute.
  7. Stir in sauces, add onions and peppers.
  8. Immediately add noodles and toss together. Remove from heat

Recipe Notes

Best served immediately.

Do not cover with lid for about half an hour to prevent getting soggy.
