
Measure out all ingredients
Place all ingredients except 1 Tbsp. of Olive Oil, paprika and parsley in blender or food processor. (you may start with less of the bean water and add as you go).
Blend on puree until soft and creamy but still has enough body.
Scrape into a storage bowl with a cover.
Smooth top with a spatula. Pour remaining olive oil on top, sprinkle paprika and parsley.
Chill in fridge and serve with sides of choice.
Best served with toasted pita bread triangles and vegetable sticks or crackers.
