Ingredients
  • 1 lb. Ground Pork Mince
  • 1 lb. Ground Beef Mince
  • 2 Eggs beaten
  • 1/2 tsp. Black Pepper
  • 2 tsp. Beef Bullions crumbled (optional) chicken
  • 1/2 tsp. Ginger grated
  • 3 cloves Garlic grated
  • 1 large Onion grated
  • 1 cups Panko breadcrumbs
  • 1 tsp. Worcestershire sauce
  • 1/4 cup Ketchup
  • 1/4 cup Parsley chopped or dry
Sauce
  • 1 -1/3 cup Ketchup
  • 1/4 cup + 2 Tbsp. Brown Sugar
  • 3 Tbsp. Mustard
  • 2 Tbsp Water if needed
Instructions
  1. Pre-heat oven to 350 degress. Lightly grease a 9x13" baking pan.

  2. Using a grater or food processor, blend the ginger, onion, garlic. Pour over the breadcrumbs along with the eggs to soften and allow breadcrumbs to swell.

  3. Crumble ground beef and pork in a large bowl with hands. Add minced vegetables and breadcrumb mixture along with the remaining ingredients. Mix well until all combined using clean hands or disposable gloves. Place in the middle along the entire length of the baking pan, forming a rounded loaf shape.

  4. Combine all sauce ingredients except the water. Spread 1/2 the sauce over the meatloaf

  5. Bake for about 45 minutes. Remove and spread the rest of sauce on top. Bake another 45 minutes.

  6. When slightly cool, around 1/2 hr. Slice & seperate in pan, spooning a little sauce over each piece. A little more water maybe used to thin out sauce as needed.

Recipe Notes

** Serves well with mashed potatoes, corn & cooked frozen green peas or vegetables of choice.
