
Wash and cut chicken in pieces for frying. Season with salt, black pepper and garlic powder. Cover in medium seasoning bowl in fridge for about 1 hour.
Combine flour mixture together on a large plate.
Prepare bar-b-que sauce ingredients together in a small pot on low heat. Bring to a low simmer and turn off until ready to use.
Heat a deep pot (not too wide) on medium heat for a few minutes. Add oil until hot. Dip chicken pieces in flour mixture and coat completely. Place a few pieces of chicken to fry at a time (not too close together). Fry approximately 8 minutes on each side or until golden brown and when poked, juices run clear.
As chicken is fried, line a large plate with paper towels to place finished pieces. Dip in bar-b-que sauce right before serving.
* To re-heat chicken, place in pre-heated oven at 400 degrees for about 15-20 minutes.
