Bar-B- Fried Chicken (Jamaican Style)

Ingredients
Chicken
  • 8-10 pieces Chicken cut up for frying
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1 tsp. Garlic Powder
  • 1 cup Oil
Flour Mixture
  • 3/4 cup Cornstarch
  • 3/4 Cup Flour
  • 1 tsp. Seasoning Salt
Bar-B-Que Sauce
  • 1 cup Bar-B-Que Sauce
  • 1/2 cup Ketchup
  • 2 Tbsp. Honey
  • 1-1/2 Tbsp. Brown Sugar
  • 1-1/2 tsp. White Sugar
  • ** optional Hot Pepper, Pepper Sauce or Jerk Seasoning of choice
  • 1/2 - 3/4 cup Water to desired thinness
Instructions
  1. Wash and cut chicken in pieces for frying. Season with salt, black pepper and garlic powder. Cover in medium seasoning bowl in fridge for about 1 hour.

  2. Combine flour mixture together on a large plate.

  3. Prepare bar-b-que sauce ingredients together in a small pot on low heat. Bring to a low simmer and turn off until ready to use.

  4. Heat a deep pot (not too wide) on medium heat for a few minutes. Add oil until hot. Dip chicken pieces in flour mixture and coat completely. Place a few pieces of chicken to fry at a time (not too close together). Fry approximately 8 minutes on each side or until golden brown and when poked, juices run clear.

  5. As chicken is fried, line a large plate with paper towels to place finished pieces. Dip in bar-b-que sauce right before serving.

Recipe Notes

* To re-heat chicken, place in pre-heated oven at 400 degrees for about 15-20 minutes.
